Chai Avocado Blondies | Vegan - GF

These fall inspired treats make good use of your overripe avocados and taste like cozy chai!

Ingredients
  

  • 170 grams avocado 3/4 cup, packed
  • 180 grams brown sugar about 3/4 cup, packed
  • 2 teaspoons vanilla extract
  • 2 tablespoons flaxseed meal
  • 6 tablespoons water room temperature
  • 1 teaspoon baking powder
  • 210 grams Bobs Red Mill 1:1 Gluten Free Flour 1 1/2 cups
Chai Spice Mix
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon cardamom
  • 1/8 teaspoon ground cloves
White Chocolate Drizzle
  • 1/4 cup white chocolate chips vegan, gluten free

Equipment

  • silicone spatula
  • 8" x 8" baking pan
  • parchment paper

Method
 

  1. Preheat oven to 325F
  2. Make flaxseed eggs by combining the flaxseed meal and water. Set aside to let the mixture thicken.
  3. Cream avocado and brown sugar for 2-3 minutes in a large bowl
  4. Add vanilla extract and flax eggs to your avocado/sugar mixture. Mix until well combined.
  5. In a separate bowl, whisk together your gluten free flour, baking powder, and chai spices. Add it to your wet ingredients and mix until combined.
  6. Place batter in pan. Bake 25-30 minutes, or until a toothpick comes out clean. Leave to cool in pan about 20 minutes.
  7. When blondies are almost done cooling, melt the white chocolate in a microwave safe measuring bowl for 30-45 seconds on High. Use silicone spatula to fold the chips into a smooth mixture and drizzle onto blondies.
